Alix's Homemade Candied Nuts

Alix’s Homemade Candied Nuts will be one of the most popular and moorish nibbles on the plate this Christmas or indeed at any gathering. In fact, it’s difficult to stop at just one handful! They will definitely disappear before your eyes. 

Homemade Candied Nuts are so simple to make, take less than an hour and make great gifts for special occasions. Additionally, you have the advantage of knowing exactly what is in them, so no nasty preservatives…

Alix's Homemade Candied Nuts


-2 eggwhites
-pinch sea salt
-1/3 cup caster sugar
-1 cup demerara sugar
-1 tablespoon ground cinnamon


1. Preheat the oven to 160°C and line a large roasting pan with baking paper.

2. Using an electric mixer, beat the egg whites and salt in a bowl until frothy.  Add caster sugar, 1 tablespoon at a time, beating constantly until well combined.

3. Stir the demerara sugar and cinnamon into egg-whites. Now add the macadamia nuts (or your choice of nuts) and mix well to coat.
4. Spread mixture over base of prepared pan. Bake for 30 minutes, stirring with a metal spoon to break up mixture every 10 minutes, or until cinnamon sugar crust feels dry.
5. Cool completely in pan. Break up and place in an airtight container. They will keep for up to 3 weeks.
