This dish while being super healthy and low-cal, combines a variety of delicious ‘mood-boosting’ ingredients sure to please the most discerning palates. It has a little of everything: savoury, sweet, sour, salty and a tinge of spice. 

Our ‘rice’ is an aromatic mixture of cauliflower, coconut and kale. It is super creamy, fluffy and tastes phenomenal.

While the Mango Salsa is irresistibly sweet and delicious, the colours of this dish are eye-catching.

All ingredients are fresh where possible and provide a multitude of superfood nutrients, vitamins and minerals for a healthy mind and body.

THIS RECIPE MAKES APPROXIMATELY 4 SERVES

INGREDIENTS

     For Salsa

  • 1 large mango, chopped
  • 1 avocado, chopped
  • ½ red capsicum, chopped
  • 1 spring onion, sliced
  • 3 tablespoons fresh coriander, chopped
  • 6 snow peas, chopped
  • 1 radish, chopped
  • 1 tablespoon coconut oil
  • 1.5  tablespoons lime juice, fresh 
  • 1/4 teaspoon salt
  • 1 organic beetroot, chopped

For “Coconut Rice”

METHOD

     To make Salsa:

  1. Combine mango, avocado, capsicum, spring onion, coriander, snow peas and radish, 1 tables oil, salt and lime juice in a bowl. Set aside.

To make “Coconut Rice:”

  1. To a large frypan add the oil and heat through. Next add the coconut milk and salt and stir to combine over a medium heat in the pan. Now add the cauliflower and kale mixture. Cook, until softened for approx. 5 mins, stirring occasionally. When ‘al dente’, remove from stove top, add in the coconut flakes. Set aside.

To make the Prawns:

  1. Shell and devein fresh prawns. Place in a bowl and add the chilli flakes and cumin. Toss all together. Now add the oil to the frypan and cook the prawns over a medium heat approx. 3-4 mins or until cooked through.

To Assemble

  1. Add the 3 components to your plate. Add the beetroot cubes to the salsa last so they don’t discolour the dish. Squeeze over some fresh lime juice and enjoy. The flavours are amazing!
