Sweet French Toast Casserole – The Ultimate Indulgence!

There is nothing like sweet lashings of maple syrup dripping from a mouthwatering plate of French toast covered in fresh berries and clotted cream… The ultimate breakfast indulgence!

This recipe is amazing! Perfect for that special occasion breakfast or brunch, as a French dessert with ice-cream, as an irresistible weekend treat, or just to spoil the ones you love.

It has the softest cakey, custardy texture inside but a crunchy, oaty topping on the outside that is pure pleasure on the palate.

We like to prep it overnight, but you could prepare it sooner by allowing at least an hour for the bread to soak thoroughly. We have chosen brioche for the quintessential French toast experience, but you can make it with any type of bread, and use a plethora of garnishes. (This dish is perfect for using up all the stale bread in the house).

  • 1 tbsp butter
  • 1 brioche loaf
  • 7-8 eggs
  • 2 cups milk
  • 1/2 cup whipped cream
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tbsp vanilla

  • 1/2 cup plain flour
  • 1/2 cup brown sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 cup butter

  • 1 cup rolled oats
  • 1/3 cup plain flour
  • 1 tbsp vanilla
  • 1 tbsp sugar
  • 80g butter

  • Fresh berries/fruit

  • Icing sugar
  • Edible flowers
  • Icecream/fresh cream/yoghurt


  1. Grease a casserole dish with butter.
  2. Cut the bread into cubes and place into the dish
  3. In a large bowl, whisk eggs the remaining eggs, milk, cream, sugars & vanilla. Pour mixture over the bread making sure bread is well soaked. Cover and refrigerate, preferably overnight or at least 1 hour.
  4. Prepare Topping 1 by: In a bowl, combine flour, salt, sugar, cinnamon, salt and nutmeg. Using fingers, rub in the butter until mixture resembles coarse breadcrumbs. Place in a plastic bag and refrigerate overnight also or for at least 1 hour.
  5. When you are ready to bake: Preheat the oven to 180 Celcius (350F).
  6. Prepare Topping 2 by: Combine oats, flour and sugar in a bowl. Using fingertips rub the butter into the oat mixture until it resembles coarse breadcrumbs.
  7. Remove casserole from fridge and sprinkle over Topping 1 and Topping 2.
  8. Bake for 1 hour. The topping should be crunchy, but if not place under the griller for approx. 5 mins. Remove from oven and serve with garnishes of your choice – Enjoy!
